Instead of being picked the almost ripe and sun-dried, white pepper is produced by removing the outer layer before or after drying, leaving only the inner seed. Use instead of black pepper to add pepper flavour to white or light coloured foods such as mayonnaise, cream-based soups or white sauces. It is also great combined with chicken.
